Our Story
Doc Rigsbee Cafe opened its doors on West Main Street with a simple conviction: that the best bread doesn't need a long history — it just needs good ingredients, patient hands, and the time to do it right.
What started as a weekend stall at the Durham Farmers Market grew into a neighborhood fixture. Locals came for the sourdough. They stayed for the community. Today, we wake before dawn every single day to mix, shape, and bake for the people who make this neighborhood feel like home.
Every recipe in our kitchen follows the same rule: if we wouldn't serve it to our own family, it doesn't leave our oven. That's not marketing. That's just how we were taught.

What We Make
48-hour cold fermentation. Wild yeast starter. A crust that sings when you tap it.
Flaky, golden, layered 27 times. Croissants, Danish, and pain au chocolat made from scratch each morning.
Birthdays, weddings, quiet Tuesdays that deserve something sweet. Order ahead — we bake to order.
Single-origin beans, roasted locally. Espresso, pour-over, and the kind of latte that makes you pause.
Whole grain, olive oil, rosemary focaccia, brioche. Every loaf tells a different story.
Local honey, small-batch preserves, artisan cheeses, and the essentials you actually want to cook with.
